Recipe for insane BLT popovers:
4 cups milk, warmed
8 eggs
4 cups flour
1 1/2 tsp salt
2 1/4 cups grated gruyere cheese
Place popover pan in oven- heat to 350
Gently warm milk over low heat and set aside
Whisk eggs until frothy and slowly whisk in milk (so as to not cook them)- set aside
Sift flour with salt
Slowly add dry to wet and combine until mostly smooth
Remove popover pan from oven and spray with non-stick vegetable spray
While batter is still slightly warm, fill each cup 3/4 full
Top each with approx 2 1/2 tbsp gruyere
Bake at 350 for 50 min, rotating pan half a turn after 15 minutes of baking
Remove from oven and pan and serve immediately
Oh and with butter. Good butter.
